Cozy Chicken Chili with White Beans

This recipe is a hit especially in the colder months here in Ohio! Below I have listed everything you will need for this Anti-Inflammatory dinner.

  • 2 tablespoons extra-virgin olive oil
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoons salt
  • 1 teaspoon chipotle powder
  • 1/2 teaspoons freshly ground black pepper
  • 4 boneless skinless chicken breasts, cut into about 1″ pieces
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 can (28oz) chopped tomatoes
  • 2 1/2 cups chicken broth (plus additional if needed)
  • 2 cans (15oz) white beans, drained and rinsed
  • 1/4 cup chopped fresh parsley, divided

  1. In a slow cooker, combine your olive oil, onions, garlic, celery, cumin, smoked paprika, salt, chipotle powder, pepper, chicken, oregano, bay leaf, tomatoes, chicken broth, and white beans. Set slow cooker to high and cook for 4 hours.
  2. If all your ingredients wound up getting too thick, add more chicken broth or some water.
  3. Once time is up, bowl up your chili and garnish each bowl with fresh parsley.
