Check out this tasty soup packed with healthy herbs, mushrooms, and a poached egg!
Serves: 1 | Prep Time: 20 min | Cook Time: 6 min | Total Time: 26 min

INGREDIENTS
- 3.5 oz mushrooms, sliced
- 1 medium green onion, sliced
- 2 tsp minced garlic
- 6 oz baby bok choy
- 1.5 cup chicken broth
- 0.5 tbsp. soy sauce
- 1/4 medium ginger piece, peeled & shredded
- 0.25 tbsp. sesame oil
- white sesame seeds when served
- 1 poached egg per bowl
INSTRUCTIONS
- In a pot add your sesame oil, sliced green onion (white part only), minced garlic, and shredded ginger. Stir for one to two minutes until fragrant.
- Slowly add your chicken broth and soy sauce. Bring to a boil.
- Add your sliced mushrooms and chopped baby bok choy. Chop them to your preference of size.
- Simmer for 5-6 minutes or until your baby bok choy is tender. I suggest tasting the saltiness and adjust if needed by adding more soy sauce or sea salt.
- Poach one egg and set aside to add when ready to serve the soup.
- Serve in a bowl and garnish with sliced green onions (green part only), sesame seeds, and gently place your poached egg on top.
