Enjoy these quick and tasty Chicken & Cauliflower Sun-Dried Tomato Bruschetta Bowls! This dish is not only easy to make but also a treat for your taste buds, perfect for any meal. Dig in and enjoy! (Note: if you are nightshade sensitive, this meal will not be for you!)

Ingredients:
- 1 10oz bag cauliflower
- 1 1/2 tbsp sun dried tomato bruschetta
- 2 cups shredded chicken
- 1 tsp minced garlic
- 1/2 tsp thyme
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 avocado divided
Directions:
- Cook the frozen cauliflower on medium high heat with a non-stick pan for 8-10 min. Be sure the water fully evaporates.
- Once the water is evaporated, bring your temperature down to low and add in 1 tbsp of the bruschetta and your minced garlic.
- Stir and let the ingredients combined.
- Next add in your two cups of shredded chicken and stir.
- Follow up with the rest of the bruschetta, thyme, Italian seasoning, salt, and pepper.
- Lastly you will divide your dish into two bowls and top them with half of an avocado. **You could also top this with some freshly grated Parmesan or whatever you’d like to enhance it in your own way!**
