Ground Turkey Sweet Potato Bake

This is an essential dish in our home that we prepare every week and use the leftovers for lunch the next day! The seasonings enhance this dish, creating a level of deliciousness that never fails to satisfy our cravings!

Serves: 3 to 4 Prep Time: 10 min Cook Time: 35 Total Time: 45 min

Ingredients:

  • 1lb ground turkey
  • 2 tbsp olive oil, divided
  • 2 small sweet potato, peeled & diced
  • 1 zucchini, cut into half moons
  • 1 tsp chili powder (divided)
  • 1 tsp smoked paprika (divided)
  • 1 tsp garlic powder (divided)
  • 1/2 tsp cinnamon powder
  • 1 tsp Italian seasoning (divided)
  • 1 tsp salt (divided)
  • 1 tsp pepper (divided)
  • 1/3 cup freshly grated parmesan cheese

Directions:

  1. Preheat your oven to 400 degrees
  2. Peel and dice your sweet potatoes
  3. Grab a baking dish and toss your sweet potatoes in with 1 tbsp olive oil
  4. Add in your cinnamon and half of your chili powder, smoked paprika, garlic powder, Italian seasoning, salt and pepper.
  5. Mix it all together and place your dish in the oven once it reached 400 degrees.
  6. Let the sweet potatoes cook for 30 minutes.
  7. Get your zucchini out and cut it into half moons and set aside.
  8. Get a pan out and brown your ground turkey.
  9. Once the turkey is cooked, add in the remaining half of your garlic powder, smoked paprika, chili powder, salt & pepper, and Italian seasoning.
  10. Once the sweet potatoes are finished in the oven. Add in your ground turkey and zucchini. Mix everything together and be careful because the baking dish will be super hot.
  11. Put the dish back into the oven for 10 minutes.
  12. Take the baking dish out and put the remaining oil into the dish, mixing everything together to ensure it doesn’t get too dry.
  13. Add the 1/3 cup of freshly grated parmesean cheese.
  14. Put back into the oven for the last time for 5 minutes.
  15. Plate in a bowl and top with more parmesan if you’d like and serve!
