Mediterranean Stuffed Chicken with Spinach & Feta

This juicy stuffed chicken is an exceptional Mediterranean dish that everyone should try. Pair it with a vibrant veggie on the side to elevate your dinner experience—I recommend Mediterranean-seasoned green beans for the perfect complement!

INGREDIENTS:

  • 2 chicken breasts, butterflied
  • 1/2 cup spinach, cooked and squeezed dry
  • 1/4 cup feta cheese, crumbled
  • 1 cloves garlic, minced
  • Salt & pepper, to your liking
  • 1 tbsp. olive oil

Instructions:

  1. Preheat your oven to 375°F
  2. With a bowl, combine your spinach, feta cheese, and garlic. Add in your salt & pepper.
  3. Carefully stuff both butterflied chicken breasts with your mixture, then add in toothpicks to secure them shut.
  4. Heat your olive oil in a skillet over medium-high heat. Sear the chicken on both sides until golden. Roughly 2-3 mins per side. (Try to get even more golden than how I got mine in the picture)
  5. Bring your skillet to the oven and bake for 20-25 mins, or until the chicken is cooked through (165°f)
  6. Serve hot, I used a Mediterranean seasoned veggie that paired perfectly with this chicken!
