Ground Turkey & Peppers Stir-Fry

Enjoy this colorful and healthy dish, filled with anti-inflammatory ingredients and high in protein!

INGREDIENTS :

  • 1lb Lean Ground Turkey
  • 2 Cups Bell Peppers (mixed colors), sliced
  • 1 Medium Yellow Onion, diced
  • 3 Cloves Garlic, minced
  • 1 tbsp ginger
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 2 tsp olive oil

INSTRUCTIONS:

  1. Chop vegetables and mince garlic and ginger.
  2. Heat olive oil in a large skillet over medium-high heat. Introduce the ground turkey and cook until it is browned, which should take approximately 5 to 7 minutes.
  3. Introduce diced onion into the pan and sauté until it becomes translucent, which should take approximately 3 minutes. Subsequently, incorporate sliced bell peppers and continue to cook for an additional 4 to 5 minutes.
  4. Stir in minced garlic and ginger, cooking until fragrant.
  5. In a small bowl, combine soy sauce and honey or maple syrup. Pour the mixture over the turkey and vegetable medley, ensuring that it is stirred thoroughly to achieve an even coating.
  6. Cook for 2-3 more minutes until hot; serve over brown rice or quinoa.
