Healthy Anti Inflammatory Turkey Chili

On a rainy day in June, when the temperature drops to the low 70s, chili is the perfect comfort food!

Ingredients

• 2 tsp Extra Virgin Olive Oil

• 1 Yellow Onion, Chopped

• 3 Cloves Garlic, Minced

• 1 Med. Red Bell Pepper, Chopped

• 1lb 99% Lean Ground Turkey

• 1 tsp Turmeric

• 1/2 tsp Black Pepper

• 4 tbsp Chili Powder

• 2 tsp Cumin

• 1 tsp Dried Oregano

• 1/2 tsp Salt

• 1 (28oz) Can Diced or Crushed Tomatoes

• 1 1/4 Cups Chicken Broth

• 2 (15oz) Cans Dark Red Kidney Beans, Rinsed/Drained

Directions

1. Sauté the vegetables

Heat the olive oil in a large soup pot or Dutch oven over medium heat.

Add:

  • Onion
  • Bell pepper
  • Garlic

Cook for about 5–7 minutes, stirring occasionally, until softened.

2. Brown the meat

Add the ground turkey.

Break it apart with a spoon and cook until no longer pink, about 5–7 minutes.

3. Bloom the spices

Add:

  • Chili powder
  • Cumin
  • Oregano
  • Turmeric
  • Black pepper
  • Salt

Stir continuously for about 30 seconds. This helps bring out the flavor of the spices.

4. Add the remaining ingredients

Stir in:

  • Tomatoes
  • Chicken broth
  • Kidney beans

Bring to a gentle boil.

5. Simmer

Reduce heat to low.

Simmer uncovered or partially covered for 25–30 minutes, stirring occasionally.

6. Taste and adjust

Taste and add:

  • More salt if needed
  • Extra black pepper if desired

Optional topping ideas

  • Sliced green onions
  • Plain Greek yogurt instead of sour cream
  • Fresh avocado
  • Chopped cilantro
  • A squeeze of lime juice

The lime at the end would be a great addition! It would brighten all the flavors and pair really well with the ginger, turmeric, and tomatoes. 🌶️🍅🥬🫘
